He exudes confidence and prowess in the kitchen with his simple work ethics that hones efficiency and is exhibited best by the unfailing results at the tasting table. Excellent! I love his recipes and do little modifications, if at all. I have been our family primary cook for over 50 years, in a family that has several professional cooks, but I do not share his generosity, patience or ability to pass on my experience to others nearly so well. Chef Lau ,you are my kind of hero!
